Raw Salads & Savory Vegetable Dishes

Asparagus with Ginger Zest

Break off tough lower ends of asparagus spears (not necessary if using pre-cut asparagus tips). Slice asparagus diagonally across spears. Place on plate. Finely grate a little ginger root and citrus zest over dish. Squeeze citrus over dish.

Asparagus with Sun-Dried Tomato

Cut dried tomatoes into strips using large kitchen scissors. Soak in a jar of filtered water until soft. Break off tough lower ends of asparagus spears (not necessary if using pre-cut asparagus tips). Slice asparagus diagonally across spears. Place on plate, scatter tomato strips across asparagus. Squeeze lime or orange over all. Grind whole black pepper over dish.

Cabbage: Asian Slaw

Shred green cabbage, add chopped cilantro, finely grated ginger. Squeeze lime over slaw. Sprinkle with paprika.

Purple Cabbage and Beet Salad

Shred purple cabbage and beets. Squeeze blood orange over salad, or add blood orange sections to salad. Grind black pepper over salad.

Purple Cabbage and Corn Salad

Shred purple cabbage, or slice thinly. Slice kernels of yellow sweet corn from cob. Mix in bowl. Squeeze orange or lime over salad.

Carrot and Beet Salad

Grate one bunch of carrots, one beet. Place in large bowl. Grate ginger over salad. Squeeze an orange over salad (or use a blood orange, if in season).

Carrots with Herbs

Grate one bunch of carrots. Chop one bunch of cilantro or parsley, or a sprig of fresh mint, or a small amount of fresh basil or rosemary. Mix together, add freshly ground black pepper. Squeeze an orange over dish.

Carrots in Oat Sauce

Grate one bunch of carrots. Pour oat cream (oats blended with water), or oat yogurt (fermented oats) over carrots. Grind black pepper over dish.

Carrots with Sesame

Grate one bunch of carrots. Grind sesame seeds; put a spoonful or two in blender, dry, hit pulse button. Sprinkle over carrots. Grind black pepper over dish.

One Kale Salad

Chop one bunch of dinosaur kale (aka: lacinato kale). Place in large bowl. Squeeze an orange over salad. Grind black pepper over salad.

Two Kale Salad

Chop one bench of dinosaur kale (aka: lacinato kale) and one bunch of red russian kale. Place in large bowl. Squeeze an orange over salad. Grind black pepper over salad.

Colorful Kale Salad

Chop one bunch of dinosaur kale (aka: lacinato kale) and/or one bunch of red russian kale. Place in large bowl. Add one or two other brightly-colored vegetables that are high in phytonutrients. Try chopped red tomato, thinly sliced red pepper, grated carrot, shredded or sliced purple cabbage, yellow sweet corn kernels sliced from cob. Squeeze an orange over salad. Grind black pepper over salad.

Mixed Baby Greens Salad: for Too-Busy People

Go to bulk greens bins. Get mix that is called Asian Mix, Braising Mix, or Stir-Fry Mix. It will consist of young tender greens such as kale, chard, bok choy, collard, mustard, etc. Place in bowl. Squeeze orange over salad. Grind black pepper over salad.

Red Beet and Parsley Salad

Shred several beets, add chopped parsley. Squeeze orange over salad. Grind black pepper over salad.

Red Beet, Red Pepper and Tomato Salad

Slice beets thinly, slice ripe red sweet peppers into thin strips, chop red tomatoes, place all in bowl. Squeeze orange over salad. Sprinkle with paprika.

Spinach and Arugula Salad

Chop one bunch of spinach and one bunch of arugula. Place in bowl, squeeze orange over salad. Grind black pepper over salad.

Spinach and Arugula Salad: Too-Busy Version

Go to bulk green bins. Get approximately equal portions of arugula and spinach. Mix in bowl. Squeeze orange over salad. Grind black pepper over salad.

Spinach and Mandarin Orange Salad

Chop spinach. Peel mandarin orange or tangerine. Separate into sections. Place all in bowl. Grind black pepper over salad.

Spinach and Mandarin Orange Salad: Too-Busy Version

Use loose spinach from bulk greens bin. Peel mandarin orange or tangerine. Separate into sections. Place all in bowl. Grind black pepper over salad.

Tomato with Herbs

Cut tomatoes into wedges. Chop an herb such as basil, cilantro, mint, parsley, or rosemary. Plce all in bowl, grind black pepper over dish.
