Eat the Whole Apple, Don't Juice It

Juicing is popular because of the assumption that the beneficial substances are extracted in the juice. The peel and the fiber are assumed to have little value. But the more research is done on foods, the more we learn about protective factors associated with fiber.

For instance, components of apple cell walls were found to prevent the antioxidant quercetin from oxidizing. Quercetin is an antioxidant found in apple peels, especially the peels of red apples. Although antioxidants help prevent harmful oxidation, the antioxidants themselves can be damaged by oxidation. But other substances in the whole apple can protect the quercetin. Then the quercetin can protect you.

Eat the Apple Peels

The peel or skin of the apple has more phenolics, a type of antioxidant, than the flesh does. Don't peel your apples, eat it all.
